To see and learn all about this world-renowned cheese, take a few steps underground, in the Combalou scree, and discover the mysteries of the fleurines and the secrets of the ripeners. Discover the origins of the formation of the Société caves through a 3D projection, then walk in front of these cracks, called fleurines, and feel their natural breath that ventilates the caves.
Take to the trails of the Causses to discover the Lacaune ewes. From milking to the transformation of milk into cheese, a film retraces for you all the steps involved in making Roquefort AOP Société. Enter the heart of the Société cellars, where stone and wood are used to transform the cheese loaves into Roquefort AOP. The breads are matured under the watchful eye of the Société Maître Affineur.
The tour is coming to an end. Your guide invites you to discover and taste the three Société Roqueforts AOP. Finally, an exhibition room allows you to relive 160 years of Société history.
Gourmet break for lunch in the majestic setting of the Reynès cellar vaults or on its terrace facing the Tournemire cirque. The cuisine is homemade, based on fresh, local produce.

Far from clichés and preconceived ideas, Alice shares her passion for her profession, Lacaune ewes. Not only will you be welcomed in a magnificent caussenard setting, but you’ll also have the opportunity to discover a sheep farm whose milk is used exclusively for Roquefort cheese. And if you still need convincing to stop by Alice’s, you should know that every visit to the farm ends with a moment of relaxation and tasting in a beautiful vaulted room.
Alice will introduce you to the aromas of the different Roqueforts and the sweet house specialty made with sheep’s milk: the famous flaune (a sheep’s milk cake flavored with orange blossom). A pure delight!

In the morning, after a hearty breakfast, slip on your hiking boots and set off for 3 hours and 7.8 km to discover Le Sentier des Échelles in the footsteps of pastoral life of yesteryear. In days gone by, an employee of the Mas de Roquefort farm would bring a meal to the shepherd grazing his sheep on the Combalou plateau. Today, to reach the plateau, it is necessary to make the ascent (532 m ascent) by taking the path through the scree at the foot of the cliff. Once at the top, admire the panoramic views!
Cross the Combalou plateau, with its lovely views over the village of Roquefort and the Larzac plateau. Along the way, you’ll have the pleasure of contemplating the famous Combalou jasse.
Once at the other end of the plateau, a stop is called for to enjoy the panoramic view of the Brias de Tournemire cirque. Finally, gently make your way back to the village along the path at the foot of the cliffs for one last stop: the orientation table and a beautiful viewpoint over the village of Roquefort.
