Gourmet stopover in Roquefort

Let’s set off for a walk under the sign of gourmandise! After a short crossing of the village of Saint-Affrique, take the shady route of the voie verte (V85), a charming bucolic track, to Saint-Jean d’Alcapiès, at the foot of the Col des Aiguières, for the first climb of the day.

The trail continues here to Roquefort, home village of the king of cheeses, where a visit to the many maturing caves will quench the curiosity and delight the taste buds of visitors.

From the largest to the smallest, from the most famous to the most artisanal, from self-guided to guided tours, there’s something for everyone. Whatever your choice, you won’t escape the unavoidable tasting of different ranges of Roquefort, accompanied by a few tips on the art of accommodating this jewel of France’s gastronomic heritage!

Saint-Jean d'Alcas and its narrow streets steeped in history

After a well-deserved taste break and a stopover at Tournemire, head for the Cistercian village of Saint-Jean d’Alcas, with “the Fort des Dames“, a true medieval gem enthroned in the heart of the town. The village nestles in the heart of an authentic, unspoilt landscape, far from the tourist masses.

Let yourself be seduced by this place and discover its rich history. The fort demonstrates the influence of the Cistercian order on a European scale. Cistercian abbeys structured the countryside by taking over the management of agriculture.

Wandering through the streets, you’ll experience an immersion in the past that will leave you with a feeling of plenitude and gentle living.

Know-how handed down from generation to generation

Continue the discoveries with Alexandre, a breeder at heart, and Emilie, a seeker of meaning, who have taken up the family torch of the Ferme d’Alcas for over 5 generations. They care for 300 ewes who produce certified organic and Demeter milk. This milk, so carefully harvested, is delivered in part to Société for the manufacture of Roquefort and for the rest, transformed on the farm into cheese: Bleu d’Alcas as well as yaourts with multiple flavors, which have made the reputation of these biodynamic producers, well beyond the Aveyronnais department!”

Proud of this know-how, they share their passion by warmly welcoming you to visit their farm. Through a photo exhibition tracing the steps involved in making yogurt and cheese, their work and the specifics of biodynamic farming will hold no more secrets!

At the end of the visit, it’s the gourmand moment with a tasting of their farm cheese made from raw ewe’s milk, their yogurts or their jams. You’re sure to come away with a new perspective on agriculture and the living world.

Like a longing for wide open spaces

Cross the great wilderness as you traverse theavants-causses. These boxwood moor landscapes are characteristic of agropastoralism, Bien Causses et Cévennes recognized by UNESCO.

Put your foot down at the Mascourbe farm known as “La Borie du Commandeur”, time to admire the Caussenarde architecture of the well-preserved buildings organized around a vast rectangular courtyard.

Then begin the winding descent into the Vallée de la Sorgues and take in the sights and sounds all the way to Saint-Félix-de-Sorgues, former chief town of an important commandery of the Hospitaliers of the Order of St. John of Jerusalem.

Complete the last few kilometers along the meandering river Sorgues to Saint-Affrique.
